Candace’s Summer Quinoa Salad
- 2 cups quinoa
- 1 mango (cut into cubes)
- 1 cup of strawberries (cut into quarters)
- ½ cup of crushed pecans
- ½ a lime (squeeze over salad as dressing)
- Cranberry cinnamon goat cheese (sprinkled on top)
This is the easiest and most delicious summer snack, and it can be eaten for breakfast, lunch or dinner!
